Fab Food Friday

I don't have a fab deal to share with you this week.  I've been staying away from stores in an effort to save some money for our upcoming vacation :)
I DO however have a fab food find for you.  I don't want my friend Lina to think I'm copying her Friday recipe special, so this won't be a Friday food thing every week.  Just this once!

You know what I love?  Noodles.  Noodles with cheese.  Lots and lots of cheese.
You know what's not good for you?  Noodles.  Noodles with cheese.  Lots and lots of cheese.
I found a Fettucine Alfredo recipe that is lighter (cuts the calories and fat of regular in half) and I adjusted it a touch by adding chicken and broccoli.  I just finished the leftovers.  SO SO SO good.  SO.  You would never guess it's lighter.

Check it out.  The original recipe credited to Cooking Light.  I adjusted it slightly.

Ingredients

  • 1  tablespoon  butter
  • 2  garlic cloves, minced
  • 1  tablespoon  all-purpose flour
  • 1 1/3  cups  milk (whatever kind you have-I used skim)
  • 1 1/4  cups  (5 ounces) grated fresh Parmigiano-Reggiano cheese, divided
  • 2  tablespoons  1/3-less-fat cream cheese
  • 1/2  teaspoon  salt
  • 4  cups  hot cooked fettuccine (8 ounces uncooked pasta)
  • 2 chicken breasts cooked and sliced into strips
  • Steamed Broccoli (I added a little less than a pound)
  • Cracked black pepper

Preparation

Melt butter in a medium saucepan over medium heat. Add garlic; cook 1 minute, stirring frequently. Stir in flour. Gradually add milk, stirring with a whisk. Cook 6 minutes or until mixture thickens, stirring constantly. Add 1 cup Parmigiano-Reggiano, cream cheese, and salt, stirring with a whisk until cheeses melt.

I add the chicken and broccoli to the sauce...

Toss sauce with hot pasta. Sprinkle with remaining 1/4 cup Parmigiano-Reggiano cheese . Garnish with black pepper, if desired. Serve immediately.

Yum.

Slurping the noodles.
She wanted a pic because Drew had one.  Looks like a funny tooth.

  1. Look at those cute faces! Sounds like a yummy recipe! I'll have to give it a try. (Although I think I'll have to serve myself the broccoli on the side since no one else in my house will touch it!)

  5. Me too Jen-- I really like Tina's blog, and I really want the necklace, but it seems I don't have my game on with quite the intensity that you do...haha! As much as it's tempting, I won't start to try to rival you :) ~b.

  6. Friday deals....wish I knew some great ones for birthday gifts. I just broke the bank on the 5 presents we purchased today for upcoming parties!

Speaking of which, Gracie went to a party last week at the home of one of her preschool friends. When we walked to the car she told me, "Mom, THAT WAS THE BEST and MOST AWESOME PARTY I'VE EVER BEEN TO!" They had pretzels & popcorn for snacks as they played musical chairs, pin-the-tail-on-the donkey, freeze dance, etc. Finished up with cake and ice cream. Everyone went home with a prize that I don't think cost more than $.50 and no goody bags. I just love my little Grace!!! In the next two weeks, we will be at Chuckie Cheese, Dreams Gymnastics (twice) and of course the ever-popular Pump It Up (twice). When did things get so out of control???

Don't know the rest of you, but I LOVE that necklace too. I love Tina's blog more. (No, I'm not trying to make some brownie points - but if I made a batch of brownies would that help???) Makes me feel like I'm on a walk with her, just minus the exercise and fresh air.....maybe I should start sitting outside with my computer now that the weather is warmer and at least I would have Tina's super humor and be avoiding the stale air that has consumed my home! I can almost taste Summer Break....or is that just wishful thinking????
It is so a FRIDAY!!! UGH!!!! Happy Weekend!
